2015 Cabernet Franc – New Release

Wine of the Month for December

Enjoy celebrating the holidays with our new release, 2015 Cabernet Franc. Our 2015 Cabernet Franc recently won a silver at the 2017 Texas International Wine Competition. This vintage is typical of Cabernet Franc- medium bodied, savory, dry, spicy finish.

A deep thinking wine, earthy, tobacco, roasted pepper, mineral driven, smoky. This​ ​silky​ ​red​ ​pairs​ ​well​ ​with​ ​any food that features fresh herbs; smoky​ ​pulled pork & Bourbon sauce;​ ​traditional​ ​American​ ​spaghetti​ ​and meatballs,​ ​or​ ​Pomodoro​ ​sauce;​ ​portabella​ ​mushroom​ ​&​ ​goat​ ​cheese​ ​ravioli;​ ​sweet​ ​potatoes​ ​with Rosemary;​ ​and​ ​dark​ ​chocolate​ ​covered​ ​cranberries.

The 2015 growing season had excellent weather: light spring rains with a hot and dry summer- this allowed for full and balanced fruit ripening. Our harvest was fairly manageable with these grapes coming from two vineyard blocks: Henslee and Old Place.

During​ ​fermentation​ ​we​ ​utilized​ ​cryo-maceration-​ ​the​ ​fruit​ ​was​ ​flash​ ​frozen and then thawed.​ ​This​ ​approach brings​ ​out​ ​color​ ​and​ ​phenol​ ​compounds.​ ​The​ ​wine​ ​was​ ​aged​ ​in​ ​oak​ ​barrels​ ​for​ ​about​ ​18 months.
